Kimchi is a traditional Korean dish made from fermented vegetables, such as cabbage, and seasoned with spices, garlic, and chili peppers. It is a rich source of essential nutrients, including vitamins (such as vitamin C, vitamin K, and folate), minerals (such as potassium, calcium, and iron), and dietary fiber.
During the fermentation process, probiotics are produced, which can improve gut health and boost the immune system. Kimchi contains several strains of probiotics, including Lactobacillus plantarum, Lactobacillus brevis, Lactobacillus kimchii, Leuconostoc mesenteroides, Weissella koreensis, and Aspergillus oryzae, which have been shown to enhance digestion, boost immunity, and reduce inflammation in the gut. Research also suggests that kimchi may potentially reduce the risk of certain types of cancer and positively impact cholesterol levels.
